The quality evaluation of fruit multivitamin juices and nectars

Abstract

The article researches 19 names of fruit multivitamin juices and nectars of different trade marks which are sold in Ukraine. There has been developed the 5-grade scale for evaluation of consumer package according to the completeness of marking, style, and information. There has been carried out the quality evaluation according to physical and chemical indicators: the content of soluble dry substances, titrated and active acidity, vitamin C. On the bases of degustation evaluation there has been determined the quality level of juices and nectars by complex method; and the rating of trade marks is made.
